What is sake SMV?
Sake is either sweet or dry. The sweetness versus dryness is indicated by the 'sake meter value' or SMV. The SMV meter usually runs from -15 to +15; minus values being sweet and plus values being dry. It can sometimes go beyond 15 but is rare. The SMV value is referred to as 'nihonshu-do' in Japanese.
When the SMV is combined with acidity value of the sake, it determines the characteristics of the sake. The acidity value of the sake runs from 1.0 to 2.0. The lower the number, the lighter the sake is.
